Home Economics & ICAN (Ideas for Cooking and Nutrition)
Our county's Extension home economics program helps strengthen family life. In a rapidly changing world, the challenges facing individuals and families in our county are great. With A problem solving philosophy, we strive to develop programs to deal with complex issues facing local families. We are helping people build leadership and other skills. We teach through group training sessions and local programs and community projects. We are dedicated to solving community needs, concerns and issues.
General Home Economics Information
ICAN Program
The classes are taught in English and Spanish. They cover 18 classes. The Educator teaches about the Food Pyramid with emphasis on low fat diets and a good balance of grains, fruits, vegetables, milk, and meat products. In each class participants learn about nutrients, serving sizes, food storage and food preparation. Other classes include: Food Safety; Healthy Eating for Pregnant Women; Food Preparation for Infants and young children;Shopping for Food;and Cooking Basics. All classes include hands-on cooking and food preparation demonstrations so participants can sample healthy snacks and meals. After 6 classes participants receive an attendance certificate. These classes are also offered to PAN and VIDA participants.

Kitchen Creations
Kitchen Creations is a cooking school for people with diabetes and their families. GOALS:
- Increase knowledge of healthy food choices and meal planning for people with diabetes.
- Present healthy versions of familiar foods and introduce new foods that are economical and easy to prepare.
- Provide hands-on opportunities to learn coooking techniques that use new or more healthful
ingredients. - Encourage healthier food choices by preparing and tasting healthy foods.
- Provide opportunities for participants to share and learn from one another.
- Demonstrate the potential of the Extension Service to provide basic diabetes education in partnership with diabetes health professionals.
